Double Apple Coffee Cake
A nice recipe for fall!
2/3 cup all-purpose flour 1/4 Cup pecans
½ Cup whole wheat flour 1/4 Cup applesauce
1 tsp baking soda 1/4 Cup packed brown sugar
1 tsp cinnamon ½ tsp cinnamon
¼ tsp salt 2 T flour
1 ½ Cups finely chopped, peeled apples ( 2 small) 1/2 tsp cinnamon
1 egg 1 Tablespoon butter
3/4 sugar ¼ C chopped pecans
1. Lightly coat a 9 inch round baking pan with cooking spray; set aside. In a small bowl stir together the 2/3 cup all-purpose flour, the ½ cup whole wheat flour, baking soda, the 1 teaspoon cinnamon and salt; set aside.
2. In a large bowl combine the apples and egg ; stir in granulated sugar, ¼ cup nuts, and applesauce. Stir in flour mixture. Pour batter into prepared pan.
3. For topping, stir together brown sugar, the 2 tablespoon all purpose flour, the ½ teaspoon cinnamon; cut in butter until mixture resembles coarse crumbs. Stir in ¼ cup nuts. Sprinkle topping over batter in pan.
4. Bake in a 350 degree overn for 25 to 30 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan for 10 minutes. Serve warm.
